The long bean, also known as the yardlong bean can be found in Lao cuisine. Sometimes chopped up in pieces to add a nice crunch in a soup. Or even alone as spicy salad, thum marg tua, similar to papaya salad, but instead of papaya use these sliced into bite sized pieces then pounded. Or heck even throw some in there with papaya salad to mix it up!
Next time you are in the restaurant, ask for it by name, or look out for chef specials!
