Chef Special: Moo Nem

I attempted to make moo Nem. A dish that no lao chef or cook would do often. You probably never seen it served at the restaurant before, why?Because it’s one of the most complicated Lao dishes that take alot of time and patience. It is made from very fine ground toasted rice powder, that is mixed with slightly sweet and sour sauce, tossed in lemon zest, Kaffir lime leaves, galangal root, cilantro, scallion and pork belly.

The reason I wanted to make it is because I want to share the experience, the taste and texture, which are all my favorite.
